Wash oranges thoroughly
Peel the oranges, keeping the peel as intact as possible
Remove as much white pith from the peel as you can
Cut the peel into strips
Place the peel in a pot and cover with cold water
Bring to a boil
Drain the peel
Repeat boiling and draining 2 to 3 more times to reduce bitterness
Combine equal parts sugar and water in a saucepan
Heat until the sugar dissolves
Add the peel to the syrup
Simmer gently until the peel becomes translucent
Remove the peel from the syrup
Drain well
Toss the peel in granulated sugar
Spread on a rack or parchment-lined tray
Let dry until no longer sticky
Store in an airtight container
