2 cups pecan halves

2 cups granulated sugar

1 cup light corn syrup

1 cup heavy cream

1/4 cup unsalted butter

1 teaspoon vanilla extract

1/4 teaspoon salt

Line a baking sheet with parchment paper or a silicone mat

Lightly toast the pecans in a dry skillet or oven if desired

Combine sugar, corn syrup, heavy cream, butter, and salt in a heavy saucepan

Cook over medium heat, stirring until the sugar dissolves

Bring the mixture to a boil

Cook, stirring frequently, until the candy reaches 240°F

Remove from heat

Stir in vanilla extract

Fold in the pecans quickly until fully coated

Drop spoonfuls onto the prepared baking sheet

Let the candy cool and set completely

Store in an airtight container
