Line a baking sheet or roasting pan with foil
Pat the pork riblets dry with paper towels
Remove any loose membrane if needed
Season the riblets with salt, black pepper, garlic powder, onion powder, paprika, and brown sugar if desired
Place the riblets in a single layer on the prepared pan
Cover tightly with foil
Bake for 1.5 to 2 hours until tender
Remove the foil
Brush the riblets with barbecue sauce if using
Increase the oven temperature to 400°F to 425°F
Return the riblets to the oven uncovered
Bake for 10 to 15 minutes until the sauce is caramelized
Broil for 2 to 4 minutes if you want extra browning
Let the riblets rest for 5 to 10 minutes
Serve hot
