15–20 dried red chilies
4–6 garlic cloves
1-inch ginger
2 tbsp oil
1 tbsp soy sauce
1 tbsp vinegar
1 tbsp tomato ketchup
1 tsp sugar
Salt to taste
Soak dried red chilies in hot water for 15–20 minutes
Drain and blend chilies with garlic and ginger into a smooth paste
Heat oil in a pan
Add the chili paste and sauté on low flame
Cook until the raw smell disappears
Add soy sauce, vinegar, tomato ketchup, sugar, and salt
Mix well and cook for 2–3 minutes
Add a little water if needed to adjust consistency
Cool and store in a clean jar
