Place boneless, skinless chicken breasts or thighs in the crockpot
Season with salt, pepper, garlic powder, onion powder, and paprika
Add a small amount of liquid such as chicken broth, water, or salsa
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours
Check that the chicken reaches an internal temperature of 165°F
Remove the chicken from the crockpot
Shred the chicken with two forks or a hand mixer
Return the shredded chicken to the crockpot and mix with the cooking juices
Serve or store as needed
