Gather supplies: popcorn kernels, neutral oil (or clarified butter), salt, optional seasonings (butter, garlic powder, paprika, sugar, chili flakes)
Choose a pot with a tight-fitting lid
Add 2–3 tablespoons oil to the pot
Heat oil over medium-high until it shimmers
Add 1–3 kernels to test readiness
When the test kernels pop, add 1/3 cup popcorn kernels
Cover with the lid
Shake the pot occasionally while popping
Remove from heat when popping slows to about 1–2 seconds between pops
Carefully uncover (watch steam)
Immediately season with salt and any desired seasonings
Toss gently to coat
Serve immediately
