Heat 2 tablespoons of olive oil or butter in a pot over medium heat
Add 1 chopped onion and cook until soft
Add 2 minced garlic cloves and cook for 30 seconds
Add 4 cups chopped tomatoes or 2 cans of tomatoes
Add 2 cups vegetable or chicken broth
Add 1 teaspoon salt
Add 1/2 teaspoon black pepper
Add 1 teaspoon sugar if needed
Add 1/2 teaspoon dried basil or oregano
Bring to a boil
Reduce heat and simmer for 20 to 25 minutes
Blend until smooth
Stir in 1/2 cup cream or milk if desired
Taste and adjust seasoning
Serve hot
