Trim any excess fat
Place the chicken in a bowl or resealable bag
Add oil
Add an acid such as lemon juice, vinegar, or yogurt
Add salt
Add pepper
Add garlic or garlic powder
Add herbs or spices of choice
Mix or massage the marinade to coat the chicken evenly
Cover the bowl or seal the bag
Refrigerate for at least 30 minutes
Marinate for 2 to 8 hours for best flavor
Avoid marinating longer than 24 hours
Remove the chicken from the marinade before cooking
Discard any used marinade unless it has been boiled first
