Season both sides with salt and black pepper
Heat an oven-safe skillet over high heat
Add a small amount of oil
Sear the steaks for 2 to 3 minutes per side
Add butter, garlic, and herbs if desired
Transfer the skillet to the oven
Roast until the internal temperature reaches 125°F for rare, 130°F for medium-rare, or 135°F for medium
Remove the steaks from the oven
Rest for 5 to 10 minutes
Serve immediately
