How to Cook Spatchcock Chicken?

Preheat the oven to 425°F

Remove the chicken from packaging and pat it dry

Place the chicken breast-side down on a cutting board

Use kitchen shears to cut along both sides of the backbone

Remove the backbone

Flip the chicken breast-side up

Press firmly on the breastbone to flatten the chicken

Tuck the wing tips under the body

Season the chicken with salt, pepper, and any desired spices or oil

Place the chicken skin-side up on a baking sheet or roasting pan

Roast for 45 to 60 minutes

Check that the thickest part of the breast reaches 165°F

Check that the thickest part of the thigh reaches 175°F

Remove the chicken from the oven

Let it rest for 10 to 15 minutes

Carve and serve
