Pound chicken breasts to an even thickness
Season generously with salt and pepper
Brine in salted water for 15 to 30 minutes, if desired
Pat chicken dry before cooking
Preheat the pan or oven fully
Use medium-high heat for searing
Add a little oil to the pan
Cook until the first side is golden brown
Flip once and reduce heat if needed
Cover the pan briefly to help cook through evenly
Use a meat thermometer
Remove from heat at 160°F to 165°F
Rest the chicken for 5 to 10 minutes before slicing
Slice against the grain
Avoid overcooking
