Wash the tomatoes
Cut a small X on the bottom of each tomato
Bring a pot of water to a boil
Prepare a bowl of ice water
Place the tomatoes in the boiling water for 20 to 60 seconds
Remove the tomatoes with a slotted spoon
Transfer them immediately to the ice water
Let them cool for 30 to 60 seconds
Lift the skin at the X and peel it off
Use a knife to remove any remaining skin if needed
