Wash apples thoroughly
Chop apples into small pieces
Place apples in a clean glass jar
Add sugar or honey
Add filtered water to cover the apples
Stir well
Cover the jar with a cloth or paper towel
Secure with a rubber band
Keep the jar in a warm, dark place
Stir once a day for about 1 to 2 weeks
Strain out the apple pieces
Return the liquid to the jar
Cover again with a cloth
Let it ferment for 3 to 6 weeks
Taste until it reaches the desired sourness
Transfer to a clean bottle
Store in a cool, dark place
