Remove the membrane from the back of the ribs
Trim excess fat if needed
Season the ribs with salt, pepper, and your preferred dry rub
Cut the rack into sections to fit the crock pot
Place sliced onions or a small amount of liquid in the bottom of the crock pot
Arrange the ribs upright around the inside of the crock pot
Add barbecue sauce or a little broth if desired
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours
Check that the ribs are tender and fully cooked
Transfer the ribs to a baking sheet if you want to brown them
Brush with barbecue sauce
Broil or bake briefly until the sauce caramelizes
Serve hot
