Open your Google Docs document
Click Edit in the top menu
Select Find and replace
Type the word you want to replace in the Find field
Type the new word in the Replace with field
Click Replace to change one instance
Click Replace all to change every instance
Use Match case if needed
Use Match using regular expressions if needed
Click Done when finished
