Pick mature green tomatoes before frost
Keep tomatoes at room temperature
Place them in a single layer
Put them in a paper bag with a ripe banana or apple
Close the bag loosely
Check daily for ripening
Remove ripe tomatoes promptly
Keep out of direct sunlight
Avoid refrigeration until fully ripe
Store ripe tomatoes in the refrigerator only if needed to slow further ripening
