Preheat the oven to 300°F to 350°F
Scoop the seeds from the pumpkin
Separate the seeds from the pulp
Rinse the seeds in a colander
Pat the seeds dry with a towel
Toss the seeds with a little oil
Add salt or other seasonings if desired
Spread the seeds in a single layer on a baking sheet
Bake for 20 to 40 minutes
Stir the seeds every 10 minutes
Remove when golden and crisp
Let the seeds cool before serving
