Place an egg roll wrapper on a clean surface in a diamond shape
Put filling near the lower corner
Fold the lower corner over the filling
Fold in the left and right corners
Roll upward tightly toward the top corner
Brush the top corner with water or beaten egg
Seal the roll completely
Repeat with remaining wrappers and filling
