Pat the roast dry with paper towels
Season the roast generously with salt and pepper
Heat a heavy skillet or roasting pan over medium-high to high heat
Add a small amount of oil with a high smoke point
Wait until the oil shimmers
Place the roast in the hot pan
Sear one side until deeply browned
Turn the roast and sear all remaining sides
Use tongs to hold and brown the edges if needed
Remove the roast from the pan once a crust forms
Proceed with roasting or cooking as desired
