Trim any silver skin from the pork tenderloin
Pat the pork tenderloin dry
Season generously with salt, pepper, and your preferred dry rub
Let the seasoned tenderloin rest while the smoker heats up
Preheat the smoker to 225°F to 250°F
Use mild wood such as apple, cherry, or pecan
Place the pork tenderloin on the smoker grates
Smoke until the internal temperature reaches 140°F to 145°F
Check the temperature with a meat thermometer in the thickest part
Remove the tenderloin from the smoker
Rest the meat for 5 to 10 minutes
Slice against the grain and serve
