How To Write Patra?

Gather fresh colocasia leaves, rice flour, gram flour, tamarind, jaggery, spices, and oil

Wash and dry the leaves thoroughly

Prepare the batter by mixing rice flour, gram flour, tamarind paste, jaggery, chili powder, turmeric, salt, and spices

Make a smooth, thick paste

Place one leaf with the shiny side down

Trim the thick stem if needed

Spread a thin layer of batter over the leaf

Place another leaf on top with the shiny side down

Spread batter again

Repeat with more leaves and batter to form a stack

Fold the sides inward

Roll the stacked leaves tightly into a log

Steam the roll until fully cooked

Let it cool completely

Slice into round pieces

Shallow fry or temper the slices if desired

Serve hot or at room temperature
