Use cold, cooked rice
Heat oil in a wok or large pan
Add chopped onion and garlic
Add vegetables and stir-fry
Push ingredients to one side
Scramble eggs in the pan
Add rice and break up clumps
Add soy sauce and seasonings
Stir-fry until evenly mixed and hot
Add cooked meat or shrimp if desired
Finish with green onions
Serve immediately
