Bring the water to a rolling boil over medium-high heat
Once boiling, turn off the heat and cover the pan
Let the eggs sit in the hot water for 9 to 12 minutes
9 minutes for soft-boiled yolks
10 to 11 minutes for medium-boiled yolks
12 minutes for firm yolks
Prepare a bowl of ice water
Transfer the eggs to the ice water immediately
Let the eggs cool for at least 5 minutes
Tap and peel the eggs under running water
Store peeled eggs in the refrigerator if not serving immediately
