How to Broil Steak in the Oven?

Pat steaks dry with paper towels

Season both sides with salt and pepper

Let steaks sit at room temperature for 20 to 30 minutes

Move oven rack to the top position, about 4 to 6 inches from the broiler

Preheat the broiler on high

Place a cast-iron skillet or broiler-safe pan in the oven while it preheats

Lightly oil the steak or the hot pan

Put the steaks in the hot pan

Broil for 3 to 6 minutes per side, depending on thickness and desired doneness

Flip once halfway through

Check internal temperature with a meat thermometer

Remove at 125°F for rare

Remove at 135°F for medium-rare

Remove at 145°F for medium

Remove at 150°F for medium-well

Transfer steaks to a plate or cutting board

Rest for 5 to 10 minutes before slicing

Slice against the grain and serve
