Pat the steak dry with paper towels
Sprinkle kosher salt evenly over all sides
Use about 1/2 teaspoon salt per pound of steak
Place the steak on a wire rack over a plate or tray
Refrigerate uncovered
Let it dry brine for at least 40 minutes
For best results, dry brine for 8 to 24 hours
Remove from the refrigerator before cooking
Pat dry again if needed
Cook as desired
Do not rinse the steak before cooking
