Choose a thick-cut steak, about 1 to 1.5 inches thick
Pat the steak completely dry
Season generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat the grill to high heat
Clean and oil the grill grates
Place the steak on the hottest part of the grill
Sear the first side for 2 to 4 minutes
Flip the steak once
Sear the second side for 2 to 4 minutes
Move the steak to a cooler part of the grill if needed
Grill to your preferred doneness
Use a meat thermometer for accuracy
Remove the steak from the grill before it reaches final temperature
Let the steak rest for 5 to 10 minutes
Slice against the grain
Serve immediately
