Choose a New York strip steak about 1 to 1.5 inches thick
Pat the steak dry with paper towels
Season generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat the grill to high heat
Clean and oil the grill grates
Place the steak on the hottest part of the grill
Grill for 3 to 5 minutes on the first side
Flip the steak once
Grill for 3 to 5 minutes on the second side
Move the steak to a cooler part of the grill if needed
Check for desired doneness with a meat thermometer
Remove at 125°F for rare
Remove at 130°F for medium-rare
Remove at 140°F for medium
Rest the steak for 5 to 10 minutes
Slice against the grain and serve
