Type two hyphens between words and let Word autoformat them into an em dash
Press Ctrl + Alt + Minus on the numeric keypad in Windows
Press Option + Shift + Hyphen on Mac
Go to Insert > Symbol > More Symbols and insert the em dash character
Use AutoCorrect to replace a shortcut with an em dash
