Drain 2 cans of corn
Rinse and drain well
Melt 2 tablespoons butter in a skillet over medium heat
Add the corn and cook until hot, about 5 to 7 minutes
Stir in a pinch of salt and a little black pepper
Spoon the corn into cups
Add mayonnaise to taste
Sprinkle with crumbled cotija cheese
Add chili powder or TajÃn to taste
Squeeze fresh lime juice over the top
Add chopped cilantro if desired
Serve immediately
