How to Make Mexican Masa for Tamales?

4 cups masa harina

3 to 4 cups warm chicken broth or water

1 1/2 cups lard or vegetable shortening

1 1/2 teaspoons baking powder

2 teaspoons salt

1 teaspoon ground cumin, optional

1 to 2 teaspoons chili powder, optional

Beat the lard or shortening until fluffy

Mix in the salt, baking powder, cumin, and chili powder if using

Add the masa harina and mix well

Pour in the warm broth or water gradually

Beat or knead until the masa is soft, smooth, and spreadable

Add more liquid if needed until the texture is light and moist

Test by dropping a small piece into water; it should float if properly whipped

Cover and let rest before using for tamales
