Peel fresh ginger
Slice ginger very thinly
Sprinkle with salt
Let sit for 10 to 15 minutes
Rinse off the salt
Pat dry
Mix rice vinegar, sugar, and a little water in a small saucepan
Heat until the sugar dissolves
Pour the hot vinegar mixture over the ginger
Let it cool to room temperature
Transfer to a clean jar
Refrigerate before serving
