Remove the steak from the refrigerator 30 to 45 minutes before cooking
Pat the steak dry with paper towels
Season both sides generously with salt and black pepper
Heat a heavy skillet or grill over high heat until very hot
Add a small amount of oil with a high smoke point
Place the steak in the pan or on the grill
Cook without moving it for 3 to 5 minutes
Flip the steak and cook the other side for 3 to 5 minutes
Add butter, garlic, and herbs if desired during the last minute
Check for doneness with a meat thermometer
Remove the steak from heat at 125°F for rare
Remove the steak from heat at 135°F for medium-rare
Remove the steak from heat at 145°F for medium
Remove the steak from heat at 150°F for medium-well
Let the steak rest for 5 to 10 minutes
Slice against the grain and serve
