Pound chicken breasts to an even thickness
Season with salt and pepper
Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with grated Parmesan
Dredge each chicken piece in flour
Dip in egg
Coat with breadcrumb mixture
Heat oil in a skillet over medium heat
Fry chicken until golden brown on both sides
Transfer chicken to a baking dish
Spoon marinara sauce over each piece
Top with mozzarella and more Parmesan
Bake at 400°F until cheese is melted and chicken is cooked through
Serve with pasta or bread
