Use fresh eggs
Crack eggs into a bowl
Add a pinch of salt
Add a small splash of milk, cream, or water if desired
Whisk until fully combined and slightly frothy
Heat a nonstick pan over low heat
Add butter and let it melt gently
Pour in the eggs
Let the eggs sit briefly without stirring
Stir slowly with a spatula, pushing eggs from the edges to the center
Keep the heat low
Remove from heat while the eggs are still slightly soft and glossy
Season with pepper if desired
Serve immediately
