Bring a pot of water to a boil
Prepare a bowl of ice water
Cut a small X on the bottom of each peach
Lower peaches into the boiling water for 30 to 60 seconds
Remove peaches with a slotted spoon
Transfer peaches immediately to the ice water
Let them cool for 1 to 2 minutes
Remove peaches from the ice water
Peel the skin off starting at the X with your fingers or a paring knife
Trim any remaining skin if needed
