Crack eggs into a bowl
Add a pinch of salt and pepper
Whisk until combined
Heat a nonstick pan over low to medium heat
Add butter or oil to the pan
Pour in the eggs
Let them sit briefly until edges begin to set
Gently stir with a spatula
Continue stirring and folding until softly set
Remove from heat while still slightly glossy
Serve immediately
