Wash the carrots thoroughly
Peel the carrots if desired
Trim the ends
Cut into slices, sticks, or cubes
Blanch the carrots in boiling water
Cool them immediately in ice water
Drain and dry the carrots completely
Spread them in a single layer on a baking sheet
Freeze until solid
Transfer the frozen carrots to freezer bags or airtight containers
Remove as much air as possible
Label the bags or containers with the date
Store in the freezer
