Pat chicken wings dry
Trim any excess skin or loose pieces
Season with salt and your preferred dry rub
Preheat smoker to 225°F to 250°F
Use wood like hickory, apple, cherry, or pecan
Place wings on smoker grates in a single layer
Smoke for 1.5 to 2.5 hours
Flip once halfway through if desired
Cook until internal temperature reaches 165°F
Increase heat to 375°F for 10 to 15 minutes if you want crispier skin
Remove from smoker and rest for 5 to 10 minutes
Serve immediately with sauce or dry seasoning if desired
