Check the expiration or sell-by date on the carton
Place the egg in a bowl of cold water
If it sinks and lies flat, it is fresh
If it sinks but stands upright, it is older but usually still usable
If it floats, discard it
Crack the egg into a separate bowl and inspect for odor
Check that the yolk is firm and the white is thick, not watery
Look for any unusual color, slime, or mold on the shell or inside
Shake the egg gently near your ear
If you hear sloshing, it may be old
Use the egg promptly if it is near its date or shows signs of age
