Pat the steak dry with paper towels
Season both sides with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Heat a skillet or grill over medium-high heat
Add a small amount of oil to the skillet if using one
Sear the steak for 2 to 4 minutes per side
Reduce heat to medium and cook until desired doneness
Use a meat thermometer if possible
Remove the steak from the heat when it reaches your target temperature
Rest the steak for 5 to 10 minutes before slicing
Slice thinly against the grain
