Thaw the turkey completely in the refrigerator
Remove the neck and giblets from the cavity
Pat the turkey dry with paper towels
Season the turkey inside and out with salt, pepper, and desired herbs
Place the roasting rack in the roaster pan
Add a small amount of water or broth to the bottom of the roaster if desired
Place the turkey breast-side up on the rack
Cover the roaster with its lid
Preheat the roaster to 325°F
Cook the turkey until the internal temperature reaches 165°F in the thickest part of the thigh
Check the temperature with a meat thermometer
Baste occasionally if desired
Remove the turkey from the roaster when done
Let the turkey rest for 20 to 30 minutes before carving
