Remove tough stems from the leaves
Stack the leaves and chop them into strips
Heat oil or butter in a large pot
Sauté onion and garlic if desired
Add collards to the pot
Pour in water, broth, or stock
Add salt, pepper, and seasonings
Bring to a boil
Reduce heat to a simmer
Cover and cook until tender
Stir occasionally
Add more liquid if needed
Taste and adjust seasoning
Serve hot
