How To Make Cabbage Soup?

1 tablespoon oil or butter

1 onion, chopped

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

1 small head cabbage, chopped

1 can diced tomatoes

6 cups vegetable or chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 bay leaf

1 tablespoon lemon juice or vinegar

Heat oil or butter in a large pot over medium heat

Add onion, carrots, and celery

Cook until softened

Add garlic and cook briefly

Add cabbage, tomatoes, broth, salt, pepper, thyme, and bay leaf

Bring to a boil

Reduce heat and simmer until vegetables are tender

Stir in lemon juice or vinegar

Remove bay leaf

Serve hot
