Gather ingredients: meat or vegetables, onions, garlic, carrots, potatoes, broth or water, oil, salt, pepper, and herbs
Cut all ingredients into bite-sized pieces
Heat oil in a large pot over medium heat
Add onions and garlic and cook until softened
Add meat and brown on all sides, if using
Add carrots, potatoes, and any other vegetables
Pour in broth or water until ingredients are covered
Add salt, pepper, and herbs
Bring to a boil
Reduce heat to low and cover the pot
Simmer until ingredients are tender and flavors blend
Stir occasionally and add more liquid if needed
Taste and adjust seasoning
