Peel the sweet potatoes
Cut them into evenly sized chunks
Place the chunks in a pot and cover with cold water
Add a pinch of salt
Bring to a boil
Reduce to a simmer
Cook until the potatoes are very tender
Drain the water well
Return the potatoes to the pot
Add butter
Add milk or cream
Add brown sugar or honey
Add cinnamon if desired
Mash until smooth
Taste and adjust sweetness
Serve warm
