Stop watering the garlic when the lower leaves begin to yellow and dry
Harvest when about half to two-thirds of the leaves are brown, with several green leaves still present
Loosen the soil around the bulbs with a garden fork or spade
Lift the bulbs gently from the soil
Avoid pulling the garlic by the stems
Shake off excess soil without washing the bulbs
Handle the bulbs carefully to prevent bruising or cuts
Place the harvested garlic in a dry, shaded, well-ventilated area
Cure the bulbs for several weeks until the skins are papery and the necks are dry
Trim the roots and cut the stems after curing
Store the cured garlic in a cool, dry, dark place
