Wash and prepare ripe fruit
Remove stems, pits, seeds, or peels as needed
Crush or chop the fruit
Measure fruit and sugar
Add lemon juice or pectin if needed
Combine fruit, sugar, and lemon juice in a large pot
Heat over medium-high heat, stirring until sugar dissolves
Bring to a rolling boil
Cook until the mixture thickens and reaches setting point
Test the set on a chilled plate
Skim off any foam
Pour hot jam into sterilized jars
Leave proper headspace
Wipe jar rims clean
Seal with lids and rings
Process jars in a boiling water bath if required
Let jars cool completely
Check that lids have sealed
Store in a cool, dark place
