Check the expiration date on the carton
Do a water test:
Fill a bowl with cold water
Gently place the egg in the water
If it sinks and lies flat, it’s fresh
If it sinks but stands up, it’s older but may still be usable
If it floats, discard it
Do a shake test:
Hold the egg to your ear and gently shake
If you hear sloshing, discard it
Crack test:
Crack into a clean bowl
If the yolk is firm and the white is thick and clear, it’s good
If the yolk is flat and the white is watery, use soon or discard
If you see mold, unusual color, or a bad odor, discard
Smell test after cracking:
If it smells off (sulfur/rotten), discard
If using cracked eggs:
Refrigerate promptly and use within 1–2 days
Discard eggs that were left out at room temperature too long:
If unrefrigerated for more than 2 hours (or more than 1 hour if above 90°F / 32°C), discard
