Scoop the seeds from the pumpkin
Separate the seeds from the pulp
Rinse the seeds in a colander
Pat the seeds dry with a towel
Toss the seeds with oil
Add salt and any desired seasonings
Spread the seeds in a single layer on a baking sheet
Roast for 20 to 40 minutes, stirring once or twice
Remove the seeds when they are golden and crisp
Let the seeds cool before serving
