How To Make Mayo?

Ingredients: 1 egg yolk

Ingredients: 1–2 teaspoons Dijon mustard

Ingredients: 1 tablespoon white wine vinegar or lemon juice

Ingredients: 1/2 teaspoon salt

Ingredients: 1/4 teaspoon black pepper

Ingredients: 1 to 1 1/4 cups neutral oil (canola/vegetable), plus more as needed

Optional: 1 teaspoon water (if mayo gets too thick)

Optional: 1 teaspoon sugar (if desired)

In a bowl, whisk egg yolk, Dijon mustard, vinegar/lemon juice, salt, and pepper until smooth

Slowly drizzle in the oil while whisking continuously (start with a few drops at first)

Keep whisking and gradually increase to a thin stream until the mixture thickens and becomes creamy

If too thick, whisk in 1 teaspoon water at a time

Taste and adjust salt and lemon/vinegar as needed

Transfer to a clean jar and refrigerate immediately

Use within 3–5 days
